Is it possible to use the new UIToolkit to show a map? For example by using it as the background of a visual element?

Hello.

Out of the box, most likely not (I haven't used UIToolkit yet to say for sure).
It will display, but it won't respond to input.
Using API (OnlineMapsControlBase.OnGetInputPosition, OnlineMapsControlBase.OnGetTouchCount), you can pass input from UIToolkit to a map and make it work.
