Feature request
It would be really good if there was a way to have these buildings use custom shaders properly. There is definitely something wrong with the current setup with UVs and/or vertex colours that makes lighting and shaders look wrong with them. It looks like it could be something in the OnlineMapsBuiltIn.cs script that could be wrong.
Cheers

okay, its just strange that the vertex colours on the buildings seem stretched or something. quite different to when they are mapped onto a normal Unity cube or other mesh.

Yes, this is possible because you are create and select materials.
But, unfortunately, I am not a great expert in the materials.
It is better to look for a solution in the relevant sections of unity documentation and/or unity forum.

But then all the walls are the same colour without any lights. Ideally I want the walls to be slightly different shades so that you can actually see they are 3d and have some depth. Possible?

I'm getting very strange lighting on buildings. No matter what shader I use and with or without lights, the colours seems to run diagonally down vertically the buildings. Its hard to explain but I have attached images. ANy idea? I just want the buildings to have flat colours without the use of lights. Thanks
